Ouma Hettie se Soetkoekies (SWEET COOKIES)
9 cups Cake flour
9 t/l Baking powder
500g Butter/Block Margarine
4 cups Sugar
Half tsp Salt
1 tsp Vanilla
Beat eggs and sugar together until creamy, add butter/margarine and beat thoroughly. Add vanilla.
Sift flour, baking powder and salt together. Mix with egg mixture until stiff dough. If the dough is too soft, add more flour (remember 1t/l baking powder per cup of flour). Roll out and bake 185 – 190. 8 to 10 min. Look how the cookies look.
You can also divide the dough into 10 parts, roll into oblong rolls, wrap in wax paper and freeze it overnight. The next day you can cut the rolls into slices with a sharp knife and bake.
